Beef and Mushroom Lo Mein

Cooking time: 30 minutes for menu        Cooking schedule: see below for instructions

      Use any beef suitable for stir-frying.  Often supermarkets will have it packaged as such.  Or substitute chicken, pork or turkey.  Stir-fries are flexible!  We use flank steak, sliced thinly on the bias.

Beef and Mushroom Lo Mein

Total time: 30 minutes
     One of the tenants of most Asian cuisines is that the food should be attractive: pleasing to the eye as well as the palate.  One way to achieve this is to make certain that your ingredients are colorful; another is to cut the ingredients into varied shapes.  This Lo Mein is as delicious as it is pretty.

Beef and Mushroom Lo Mein Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
pot and colander for pasta, large nonstick skillet,
lid, plate, medium bowl, large pasta serving bowl

Put water on high heat for pasta
Slice the beef
Mix soy sauce, sesame oil
Add beef, stir to coat, set aside
Clean, slice leek
Mince garlic, ginger
Cut pepper
Slice celery, carrot
Clean, slice mushrooms
Heat oil in skillet

Add mushrooms, stir-fry
Start to cook pasta
Remove mushrooms to plate
Add dollop of oil, leeks to skillet, stir-fry
Add ginger, garlic to leeks, stir-fry
Remove leeks, garlic to plate
Add oil, carrot, pepper, celery to skillet, stir-fry
Remove vegetables to plate
Add beef, stir-fry
Return vegetables, add stock, sherry, cover, simmer
Dissolve cornstarch in soy sauce, water
Drain pasta
Add cornstarch to lo mein, thicken
Put pasta in serving bowl, add beef, vegetables
Stir, serve
