Grilled Chicken Breasts with Mustard Sauce
Barley with Zucchini (Courgette) and Tomato

     The barley and vegetables are cooked separately, then combined for a simple, healthy side dish.

Grilled Chicken Breasts with Mustard Sauce 

Total time: 35 minutes
   Grilled chicken breasts finished with a warm mustard sauce; a little bit of heat for summer cooking.

 Instructions:

Barley with Zucchini (Courgette) and Tomato

Total time: 20 minutes
     Healthy barley combined with summer's bounty makes an easy, colorful side dish.  Can be served hot or cold.

Barley with Zucchini (Courgette) and Tomato Ingredients:

 Instructions:

Cooking Schedule: 35 minutes
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
scissors, small bowl, whisk, 2 small saucepans,
1 lid, large bowl, dish for marinating, medium
skillet, barbecue grill or skillet

Turn on/light barbecue grill
Combine stock, sherry, reduce
Mix mustard, oil, spread on chicken
Slice zucchini, onion
Mince garlic
Cut tomato into chunks
Cut pepper

Start to cook chicken
Snip herbs
Start to cook barley
Sauté onion, pepper
Whisk mustards into stock, remove from heat
Add garlic, zucchini to onion, pepper
Turn chicken
Add yogurt to sauce
Add tomato to vegetables, cover, simmer
Remove barley, put into bowl
Add vegetables to barley, stir in vinegar
Remove chicken
Slice and serve with sauce
