Turkey Lo Mein

    This is a spring version of Lo Mein, with cherry tomatoes rather than mushrooms; lighter and fresher.    

Turkey Lo Mein

Total time: 30 minutes
     You can either use turkey cutlets, cut into strips or part of a turkey tenderloin, cut into bite-size pieces.  Almost any vegetable, cut small, will work in this.  It's a great way to use up the odd bits left in the fridge.

Turkey Lo Mein Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large skillet with lid, pot and colander for pasta
Put water on high heat for pasta
Slice onion, celery
Mince garlic, ginger
Cut broccoli, carrot
Cut turkey
Dissolve cornstarch in soy sauce
Start to cook pasta
Stir-fry onions, celery

Add garlic, ginger, stir-fry
Remove vegetables
Add turkey, stir-fry
Remove turkey
Add broccoli, carrots, stir-fry
Return everything to skillet, add stock, sherry
Cover, simmer
Cut cherry tomatoes in half
Drain pasta
Add cornstarch mixture to sauce, thicken
Add pasta, tomatoes, toss well to combine
Serve all and eat
