Butternut Squash Timbales with Apple Sauce
Braised Pork Loin with Mustard Onion Sauce
Potato and Carrot Pancake

       The timbale is easy - so is the Apple Sauce... Have any leftover applesauce with toast for breakfast. The shallots were made last night so it's not as busy as it looks....
We'll use 8 - 12oz of pork in the Lo Mein on Monday, if you have more than that leftover, have it for lunch.

Butternut Squash Timbales with Apple Sauce

Total time: 50 minutes
  Apples and butternut squash make this a very autumnal dish.  If you have sage in your garden, use them to make the design, if not just leave off.

Braised Loin of Pork with Mustard Onion Sauce

Total time: 1 hour 15 minutes
   I use a small loin roast, 1 1/2 lbs and it cooked to the correct temperature in just over an hour. The bay leaves, mustard and wine add a lovely, slightly pungent flavor to both the pork and the Onion Sauce.

Potato and Carrot Pancake

Total time: 30 minutes 
   This is a variation on the Potato Leek Pancake that is one of my kitchen staples. Easy to make: just shred the vegetables, combine and fry.

Potato and Carrot Pancake Ingredients:

 Instructions:

Cooking Schedule: 60 - 90 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
heavy pot with lid for braising, medium nonstick
skillet, saucepan with steamer, small saucepan with
lid, 2 medium bowls, 2 ramekins, parchment or wax
paper, baking pan for ramekins, large plate, foil

Turn oven on, 400F (200C)
Slice onions, sauté
Peel squash
Add pork to pan, brown
Clean squash, cut what's needed, refrigerate rest
Steam squash
Turn pork, stir onions
Slice, sauté shallots if not done earlier
  If shallots in fridge, take out, let warm up a bit
Add stock, wine, mustard, bay to pork, cover, braise
Peel, cut apple, cook
Butter, line ramekins
Remove squash
Mash squash
Whisk egg, yogurt
Put sage, shallots in ramekins

Mix squash, egg, spoon into ramekins
Put ramekins in pan with hot water, bake
Finish apple sauce, cover and set aside
Mind the pork, heat should keep it at low simmer
     Pause while stuff cooks
Peel carrots, shred
Shred potatoes
Combine carrot, potatoes, stir well
Put carrot/potatoes in skillet, pat down, cover, cook
    Pause while stuff cooks
Dissolve cornstarch in stock for later
When ready, turn potato/carrot pancake
Remove timbales from oven
Turn potato/carrot cake to low to keep warm
Remove timbales from ramekins, shallot side up
Check pork, when done remove, cover, let rest
Garnish timbales with apple sauce and serve.
Done?  Increase heat under onion sauce
Increase heat under potato / carrot pancake
Stir cornstarch, stir into sauce, thicken
Slice pork, arrange on platter, spoon onions around
Put potato cake on plate, slice
Serve all
