Mushrooms Stuffed with Bacon

       I've noted some deviations from the recipes here - use the recipe as written if you like, use the substitution if you have leftovers. We're skipping the sliced tomatoes with the mushrooms.
This is a non-traditional pasta sauce with the flavors of the countries surrounding the Mediterranean.

Mushrooms Stuffed with Bacon and Tomato

Total time: 20 minutes
    I love stuffing vegetables.  This is a less-caloric version of a recipe I made years ago, stuffing the mushrooms with lots of bacon and cream cheese - full fat of course.  That was good; this is better... And so much less guilt! The Vinaigrette is much thicker and more intense than I would use for a lettuce salad, but works well with the mushrooms and sliced tomato.

Pasta with Mediterranean Meat Sauce

Total time: 35 minutes
     Sherry and paprika from Spain; olives from Italy, Spain and Greece; feta from Greece; red peppers from France; capers and tomatoes from everywhere... An International dish! If you have ham left from the holidays use that rather than the ground beef - if you like....

Glazed Tarragon Carrots

Total time: 25 minutes
     Roll-cutting gives interesting looking pieces with lots of surface to be coated with this lovely sweet-sour, tarragon glaze.  I came up with this recipe in the spring with my fresh tarragon, but it's just as good now, with the dried.

Glazed Tarragon Carrots Ingredients:


Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large skillet, medium skillet, bowl, small skillet / lid,
baking sheet, pot and colander for pasta

Turn oven on 400F (200C)
Clean, trim mushroom caps
Sauté mushroom caps
Chop shallots
Turn mushrooms
Chop bacon (ham)
Remove mushrooms, sauté shallots, bacon
Select 1 tomato, chop, put in bowl
Add shallots, bacon, stir
Put mushroom caps on baking sheet, fill, bake
Put water on high heat for pasta
Chop onion, pepper, mince garlic

Sauté paprika, onion, garlic, pepper
Chop tomatoes, reserving all juices
Add beef (ham) to skillet, brown
Peel, roll-cut carrots
Add tomatoes, sherry, stock, herbs, boil
Reduce heat, simmer
Chop olives
Cube feta
Cook carrots
Cook pasta
Remove mushroom caps, serve.
Drain pasta
Add capers, olives to sauce, heat through
Finish carrots, cook off pan juices
Remove sauce from heat, add feta, stir
Spoon sauce over pasta, serve
