Warm Savoy Cabbage and Leek Salad
Pan-Fried Salmon with Gnocchi

     Winter salads can be just what we need to combat all the rich winter / holiday food around this time of year.  And, in case you didn't know, leeks are in season. The rest of the gnocchi will be used tomorrow

Warm Savoy Cabbage and Leek Salad

Total time: 15 minutes 
    To trim Savoy cabbage, break off and discard the bright green outer leaves.  This cabbage has a much looser head and cooks faster than the traditional 'white' cabbage.

Pan-Fried Salmon with Gnocchi

Total time: 25 minutes 
     This could be made with any firm fish, but we like salmon, and it's always reasonably priced where we live.  Frying the gnocchi makes them light as feathers.

Sautéed Carrots with Leeks

Total time: 20 minutes 
     If your leek is very clean, leave it whole and slice rounds for a nicer presentation. If sandy, slice in half and rinse as usual.

Sautéed Carrots with Leeks Ingredients:

 Instructions:

Cooking Schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small skillet with lid, 2 medium skillets, large skillet
with lid, pot and strainer for gnocchi

Put water on high heat for gnocchi
Trim, clean, slice 1 1/2 leeks, save 1/2
Slice carrot
Trim, slice cabbage
Pit olives, chop
Grate Parmesan
Cut salmon
Sauté bacon for salad
Cook gnocchi
Turn bacon
Drain gnocchi
Remove bacon, fat
Sauté leeks for salad
Sauté leeks for carrots

Sauté gnocchi
Sauté cumin, paprika, for salmon
Add salmon, brown
Crumble bacon
Add cabbage to leeks for salad
Add carrots, stock to leeks, cover, simmer
Turn salmon
Add vinegar, olives to cabbage, stir
Add bacon, heat through
Cover salmon, reduce heat to very low
Turn gnocchi, reduce heat to very low
Finish salad, plate, drizzle oil, serve
Done?   Mind the gnocchi
Uncover carrots, cook off liquid
Remove salmon
Increase heat, add stock, sherry, dill, mustard, boil
Remove sauce from heat, add yogurt, 1 tbs Parmesan
Plate gnocchi, top with salmon, sauce, Parmesan
Serve all
