Chicken Noodle Soup
Onion Biscuits

Cooking time:  90 minutes for menu       Cooking schedule: see below for instructions

            A classic soup, easy to make and always delicious.  If you want to make a full pot of stock, which takes a couple of hours, use a small stewing chicken. Reduce and freeze what you don't use for this soup.

Chicken Noodle Soup

Total time: 120 minutes
      If you can get cheap chicken wings, add them to the stock for more flavor.  Use traditional egg noodles, spaetzle or any type of small pasta. This will make enough for 4 generous servings.  If you want more soup, use a stewing  hen, or add another breast and thigh and increase the vegetables.

Onion Biscuits

Total time: 25 minutes
    The way to make light biscuits is a minimum of handling.  For those not familiar with baking powder biscuits - they are light and wonderful eaten with melted butter while still hot from the oven.  They resemble hockey pucks the next day so don't bother to save the leftovers.

Note:  This will yield 5 - 8 biscuits.  I cut my regular biscuit recipe in half.

Cooking Schedule: 90 minutes for menu
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
soup pot, strainer and large bowl or pot, medium
bowl, rolling pin, blender, baking sheet, small
skillet, pastry cutter

Earlier - making the stock:
Cut celery, carrot, onion into chunks
Put chicken, vegetables, herbs in pot
Add water, cover, bring to a boil
Reduce heat, simmer... Ignore it for an hour or 2
When done: strain, reserving stock, chicken
Either chill stock and chicken or make soup
Making the soup:
Turn oven on, 425F (215C)
Heat stock
Peel, cut carrots, add to soup

Slice celery, add to soup
Chop all onions, add 1 1/2 to soup
Add herbs to soup, cover, simmer
Sauté 1/2 onion for biscuits
Cut chicken, add to soup
Purée onion in milk, add lemon
Put dry biscuit ingredients into bowl
    Pause until 15 minutes before serving
Add noodles to soup
Cut butter into biscuit ingredients
Add onion/milk, stir briefly
Flour surface
Turn dough out, knead lightly
Roll dough out, cut biscuits, bake
     Pause while it all cooks
Remove biscuits
Serve soup
