Grilled Chicken Breasts with Pimiento Sauce

Warm Green Bean Salad

     We'll use the leftover Pimiento Sauce with the chicken.  You can add a bit of Tabasco to make it hotter....

Grilled Chicken Breasts with Pimiento Sauce 

Total time: 30 minutes
     Marinated, grilled chicken breasts with a drizzle of Pimiento Sauce..... Simple and delicious take on barbecue sauce. You can warm it slightly if you like.... I didn't.

Couscous Pilaf

Total time: 15 minutes
    You can leave the celery, onion and carrot raw for this pilaf, but I prefer it to be lightly sautéed.  You could also put it with the couscous before adding the hot stock.... I like the flavor of sautéed.

Warm Green Bean Salad

Total time: 25 minutes
    Warm beans with bacon bits.... There is something about that combination that never fails to excite the taste buds.  These beans are cooked until tender, rather then being quickly blanched; this is an old-fashioned salad....

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
scissors, small bowl, medium bowl with lid, small
saucepan, small skillet with lid, small skillet,
dish for marinating, barbecue grill, grill pan

Turn on/light barbecue grill
Mix marinade for chicken, spoon over
Top and tail beans, cut
Heat stock for couscous
Sauté bacon
Chop celery, carrot, onion
Sauté carrot, celery, onion
Snip herbs
Start to cook chicken

Remove bacon, crumble
Cook beans
Remove carrot, celery, onion from heat
Put couscous in bowl, pour stock over, cover
Warm pimiento sauce
Cut cherry tomatoes
Turn chicken
Remove beans
Add sugar, vinegar, mustard, Worcestershire
Heat through, stirring
Pour over beans, add chives, bacon, stir
Finish couscous
Remove chicken
Slice chicken, drizzle with Pimiento Sauce
Serve
