Lentil and Sausage Pasta with Avocado Sauce

      I love avocado sauce on summer pastas.  Made with soft goat cheese to add a bit of sharp definition, it accents the slight saltiness of the grilled sausages and the earthiness of the lentils.

Lentil and Sausage Pasta with Avocado Sauce, garnished with Zucchini

Total time: 30 minutes
   Not quite a hot pasta dish; not quite a pasta salad.  But chock-a-block with vegetables and flavor. Can easily be made vegetarian: eliminate the sausages and add more zucchini, lentils (cooked in water) or tofu.

Lentil and Sausage Pasta with Avocado Sauce Ingredients:

 Instructions:

Cooking Schedule: 30 minutes
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
scissors, small bowl, masher / forks, pot for pasta,
colander, small saucepan with lid, large nonstick
skillet, barbecue grill and tools OR large skillet
Put water on high heat for pasta
Check, rinse lentils, cook
Light/turn on barbecue grill
Snip all herbs
Mash avocado, lemon
Add goat cheese, mash
Slice zucchini, sauté

Start to cook pasta
Start to cook sausages
      Pause while stuff cooks
Turn the zucchini
Turn the sausages
      Pause again
Drain lentils if needed, put into big serving bowl
Drain the pasta
Add pasta to lentils, combine
Add herbs, avocado sauce to pasta, combine
Remove sausages, slice,add to pasta
Remove zucchini, add to pasta
Serve
