Shrimp and Avocado Cocktail
Grilled Lamb Chops with Sweet/Sour Marinade
Grilled Potatoes and Carrots Dijon

       We cooked the shrimp ahead to make this starter a snap. Both the lamb and vegetables are grilled, making this a very easy dinner from the grill.....

Shrimp (Prawn) and Avocado Salad

Total time: 10 minutes
    In Ireland they call this 'Mary Rose' sauce - haven't a clue why, but it's simple and delicious; different than the traditional American version of ketchup and horseradish. I added the capers. You'll need a bit more time if you have to clean the shrimp - another 10 - 15 minutes.

Lamb Chops with Rosemary, Sweet and Sour Marinade

Total time: 30 minutes
    The Sweet and Sour comes from the marmalade and the vinegar... It's closer to the original Chinese sauce than what one finds on American 'Chinese' buffets.

Grilled Carrots and Potatoes Dijon  

Total time: 35 minutes
   Dijon-style mustard lends a bite to these roasted vegetables, not much.... Just a little, to make them interesting.  They can be done on the barbecue or in the oven; either way, stir them once or twice.

Grilled Carrots and Potatoes Dijon Ingredients:

 Instructions:

Cooking Schedule: 40 minutes for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
(small skillet for shrimp) 2 small bowls, whisk, dish
for marinating, medium bowl, grill pan, barbecue

Light/turn on barbecue grill
Cut potatoes
Peel, cut carrots
Mix mustard, oil, garlic, thyme
Add potatoes, carrots, stir to coat
Start to cook potatoes, carrots
Make marinade, pour over lamb chops
Prepare shrimp, sauté if not done, set aside
OR: remove shrimp from fridge to warm up a bit

Make sauce for shrimp
Stir potatoes, carrots
Clean, prepare lettuce if using
Cut, pit, slice avocado, cut tomatoes
Arrange lettuce on two plates
Add avocado, shrimp, tomatoes
Add sauce, serve
Done?
Stir potatoes, carrots
Cook lamb chops
     Pause while it all finishes
Turn lamb chops
Stir potatoes, carrots, remove
Remove lamb chops, serve
