Chicken Mushroom Chowder

            Our first soup of the year, and an easy one to start.  It takes good advantage of the seasonal mushrooms and makes enough for 2 meals... Perfect for autumn!

Chicken Mushroom Chowder

Total time: 35 minutes
    I used chicken breasts, but thighs would work as well. Either way, used skinned chicken to save on fat and calories. Because everything is sautéed briefly this is a quick-cooking soup; because it's a chowder, it's very thick. Add more stock or milk if you prefer it thinner.  This is enough for 2 meals or 4 persons.

Popovers

Total time: 45 minutes
     These are the easiest 'bread' possible to make.  The only things to remember is not to whisk too thoroughly (it makes them tough, lumps are okay), and eat them hot from the oven slathered in butter.... how hard is that?

Popovers Ingredients:

 Instructions:

Cooking Schedule: 55 minutes
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
large bowl, whisk, muffin pan, large saucepan, lid

Turn on oven 450F (225C)
Chop onion, carrot, mushrooms, mince garlic
Butter muffin pan if needed
Beat eggs
Add remaining ingredients, beat lightly
Ladle into muffin pan, bake
Cut chicken, sauté
Add onion to chicken, sauté
Add garlic to chicken, sauté

Add carrots to chicken, sauté
Add mushrooms to chicken. sauté
Add rice to chicken, sauté all 2 minutes longer
Add flour, sauté, stirring constantly
Slowly stir in broth
Add thyme, boil, reduce heat, cover, simmer
     Pause while it all cooks
Turn oven down for popovers, 350F (180C)
      Pause while it all cooks
Check the soup - done? stir in milk, heat
Add more stock or milk if you want a thinner soup
Remove popovers,
Serve
