Lentil and Sausage Pasta with Avocado Sauce, garnished with Zucchini

     I love avocado sauce on summer pastas.  Made with soft goat cheese to add a bit of sharp definition, it accents the slight saltiness of the grilled sausages and the earthiness of the lentils. The lentils and zucchini are left from Friday. The goat cheese will be finished on Thursday.

Lentil and Sausage Pasta with Avocado Sauce, garnished with Zucchini

Total time: 30 minutes
   Not quite a hot pasta dish; not quite a pasta salad.  But chock-a-block with vegetables and flavor. Can easily be made vegetarian: eliminate the sausages and add more zucchini, lentils (cooked in water) or tofu.

Lentil and Sausage Pasta with Avocado Sauce Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
scissors, small bowl, masher or forks, pot for pasta,
colander, large nonstick skillet, barbecue grill and
tools OR large skillet
Cook lentils if needed
Put water on high heat for pasta
Light/turn on barbecue grill
Snip all herbs
Mash avocado with lemon
Add goat cheese, mash

Slice zucchini, sauté
Start to cook pasta
Start to cook sausages
  Stand around and wait... enjoy the summer evening
Turn zucchini
Turn sausages
Put the lentils, herbs into big serving bowl
Drain the pasta, add to lentils, combine
Add avocado sauce to pasta, combine
Remove sausages, slice, add to pasta
Remove zucchini, add to pasta
Serve
