Stir-Fried Turkey with Cabbage and Cashews

Cooking time:  30 minutes for menu      Cooking schedule: see below for instructions

      Bok Choy is a common ingredient in stir-fries; Savoy cabbage is a good substitute.  Cashews are optional, but I love them!

Stir-Fried Turkey with Cabbage and Cashews

Total time: 30 minutes
     You can use turkey cutlets for this, sliced into strips, or part of a larger turkey tenderloin, freezing the rest for another time, or even ground turkey... or chicken breasts....

Stir-Fried Turkey with Cabbage and Cashews Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan with lid, large skillet with lid, plate

Slice onion
Mince garlic, ginger
Slice celery
Cut pepper
Trim, slice mushrooms
Slice cabbage
Start to cook rice (assuming 20 minutes)
Cut turkey
Heat olive oil in skillet
Sauté onion, celery, mushrooms

Add garlic, ginger to skillet, sauté
Remove onions, et al, to plate
Add sesame oil, soy sauce to skillet
Sauté turkey
Add turkey to onions
Sauté cabbage, pepper
Return all ingredients to skillet
Add stock, sherry, peanut butter, stir well
Cover, simmer
Dissolve cornstarch in water
When ready, uncover, add cornstarch, stir
Put rice on platter
Spoon turkey and veg in center
Sprinkle with cashews, serve
