Warm Lentil Salad/Creamy Mustard Dressing on Spinach
Braised Chicken with Rice and Carrots

Cooking time:  2 1/2 hours (90 minute break) for menu       Cooking schedule: see below for instructions

     The Chicken with Rice is a simple, classic French housewife's dish.  Everything but the rice goes in the pot and then it's left alone for 2 hours. Use the rest of the pepper from the salad on Wed.

Warm Lentil Salad/Creamy Mustard Dressing on Spinach

Total time: 30 minutes
     Lentils make wonderful, flavorful, nutritious salads.   I use the tiny green French ones - du Puy.  You could use the larger brown lentils, but not the red ones which would turn into a purée.

Braised Chicken with Rice 

Total time: 2 hours 30 minutes 
     This is a classic in farm houses through out France!  Find an older, stewing hen, if you can.  They have more flavor and the long cooking time will make them tender.  Not a roasting hen, they're too big to fit into most pots. A broiler/fryer will work as well. This will be enough for 2 meals.

Cooking Schedule: 2 1/2 hours (90 minute break) for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium saucepan with lid, small saucepan with lid,
bowl, whisk, small bowl, Dutch oven with lid

Wash chicken
Heat oil in large pot, add chicken, brown
Trim, chop onion
Turn chicken
Peel, slice carrots
Remove chicken, add onion, carrot, sauté 5 min.
Return chicken to pot, sprinkle paprika
Add wine, stock, herbs, cover, simmer
      Break for 1 1/2 hours
Cook lentils
      15 minute break
Slice celery

Chop pepper
Make Mustard Cream
Remove 1 1/2 cups liquid from chicken
Add to rice, with 1/2 cup stock, cover, cook
Drain lentils when done, add herbs, pepper, celery, stir
Prepare spinach, arrange on plates
Add Mustard Cream to lentils, stir well
Spoon lentils on spinach, crumble feta on top
Serve salad, relax, enjoy
Done? 
Mind the rice
Remove the chicken
Remove the carrots
Dissolve cornstarch in water
Thicken gravy
Combine carrots, rice
Carve chicken
Serve all and enjoy!
