Avocado Cocktail
Salmon, Smoked Salmon and Potato Gratin
Sautéed Brussels Sprouts

Cooking time:  55 minutes for menu          Cooking schedule: see below for instructions

      The quantities of the salmon, smoked and fresh, are not precise, use whatever comes in a package.

Avocado Cocktail

Total time: 10 minutes 
  This simple salad highlights creamy avocados and their subtle flavor.  A bit of spice works well.

Salmon, Smoked Salmon and Potato Gratin

Total time: 55 minutes 
    A mix of fresh and smoked salmon gives a lot of flavor to this simple gratin.  Simmering the potatoes in milk shortens the baking time.

Sautéed Brussels Sprouts

Total time: 20 minutes 
    A lot of people don't like Brussels Sprouts.  A lot of people over-cook them.  Think there's a relationship?  As with most vegetables, simple and quick is (usually) best.  

Sautéed Brussels Sprouts Ingredients:


Cooking Schedule: 55 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
2 medium skillets, 1 lid, baking dish, bowl, foil

Turn oven on 400F (200C)
Put milk in large skillet, heat
Slice potatoes, add to milk, simmer
Slice fresh salmon
Roughly chop smoked salmon
Shred cheese
When potatoes are ready, layer gratin
Add dill, yogurt to milk, pour over gratin
Top with cheese, cover with foil, bake
Trim, slice Brussels sprouts

Slice shallot
Slice celery
Pit olives if needed
Make cocktail sauce, taste, adjust
Pit, cube avocado
Sauté Brussels sprouts, shallots
Make Avocado Cocktail
Reduce heat under sprouts to low
Serve Avocado Cocktail
Uncover gratin, bake
Stir veg, add stock, thyme, cover
    Wait for everything to finish
Remove gratin, finish veg, serve
