Turkey Cutlets Piccata
Sliced Sautéed Potatoes

     Assemble the Cauliflower Gratin and pop it in the oven, start the potatoes and then pay a bit of attention to the turkey.... Another easy dinner

Turkey Cutlets Piccata                                         Preparation and cooking time: 25 minutes
    Thinly sliced turkey cutlets cook quickly and are a great substitute for the veal cutlets normally used in this dish.  If you can't get them get a turkey tenderloin and either slice it into thin cutlets yourself or ask your butcher. You could also use boneless, skinless chicken breasts.

2 - 4 turkey cutlets, 12oz, (350gr)
1/2 onion 
2 tbs capers
1 lemon
1/2 cup (4oz, 120ml) chicken stock (broth)
1/2 cup (4oz, 120ml) white wine
1 tbs cornstarch (maizena, corn flower) dissolved in 1 tbs water
1 tbs olive oil

Chop the onion.  Slice the lemon and pick the seeds out of the slices.  In medium nonstick skillet sauté the onion until tender.  Move onions to sides of pan and sauté turkey cutlets until lightly brown on both sides.  Add the chicken stock, wine and capers.  Place the lemon slices on top of the turkey cutlets, cover, reduce heat and simmer 10 minutes.  Remove turkey cutlets (with lemon slices on top) to a platter and keep warm.  Stir in the cornstarch mixture and heat, stirring until thick. Serve cutlets with sauce on the side - sprinkle on more capers if you like.

Sautéed Sliced Potatoes                                    Preparation and cooking time:  30 minutes
Thinly sliced raw potatoes, sautéed, undisturbed, in a large skillet.  Let them get nicely browned, turn once or twice and finish with a sprinkle of salt.  They are creamy on the inside; crisp on the outside and incredibly easy.

2 potatoes, about 12oz total (350gr)
2 tsp olive oil
2 tsp butter

Slice potatoes paper thin. Melt the butter in a large nonstick skillet over medium-low heat.  Add the potatoes, arranging in layers.  Drizzle the oil over the top.  Allow to cook for 15 minutes (Reduce heat further if they start to get too brown). With a spatula turn in sections - don't worry about being neat.  Continue to cook for another 10 - 15 minutes, until potatoes are done and nicely golden.  Remove, add salt and pepper if you feel so inclined, and serve.

Cauliflower Gratin                                              Preparation and cooking time:   35 minutes
    Sliced cauliflower, sprinkled with shallots and topped with cheese: a simple gratin.

1/2 small head cauliflower
2 shallots
1/2 cup (4oz, 120ml) chicken stock
1/3 cup (1.5oz, 45gr) Gruyère or other cheese Cheddar
1 tsp olive oil

Break the cauliflower into large florets, then slice thickly.  Roughly chop shallots,  Shred cheese or cut into thin slices. Lightly oil a small glass baking dish.  Lay half of the cauliflower evenly in the dish,  Sprinkle with shallots and top with remaining cauliflower.  Top with cheese.  Pour the chicken stock over the top.  Cover with a lid or foil and bake, 400F (200C) for 20 minutes.  Uncover and bake for 10 minutes longer, to brown the top.  Remove and serve.

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
2 medium nonstick skillets, one lid, small baking dish
with lid or foil

Turn oven on, 400F (200C)
Slice cauliflower
Chop shallots
Shred or slice cheese
Lightly oil baking dish
Assemble gratin, cover, bake
Slice potatoes
Melt butter in skillet, add potatoes
Drizzle with oil, let cook
Chop onion

Sauté onion for turkey
Slice lemon, remove seeds
Move onion aside, brown turkey cutlets
Dissolve cornstarch in water
Turn turkey
Turn potatoes
Add stock, capers, wine and lemon to turkey
Cover and simmer
    Pause while stuff cooks
Uncover cauliflower
Remove turkey
Thicken sauce and finish turkey
Remove cauliflower
Remove potatoes
