Menu Plan for the week of June 21, 2013:  Monday's Recipes

Ham, White Bean Salad / Thousand Island Dressing

Cooking time: 20 minutes for menu          Cooking schedule: see below for instructions

     Serve with some crusty country bread on the side if you like. We'll use the rest of the beans in the salad on Wednesday. Other than the eggs - no cooking involved! If you have any dressing left it makes a great veggie dip - any celery left?

Ham, White Bean Salad, Thousand Island Dressing

Total time: 20 minutes
    Assemble the salad while the eggs cook. Toss a little dressing with the lettuce, drizzle more on top.  Easy, summer salads.

Ham, White Bean Salad, Thousand Island Dressing Ingredients:


Fresh Fruit

your choice

Cooking schedule: 20 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan, large salad bowl

Hard cook eggs
Prepare lettuce, spin dry, put in bowl
Snip chives, add to lettuce
Chop capers
Make dressing
Cut ham, cheese,

Slice tomatoes
Open, drain, rinse beans, refrigerate extra
      Wait for eggs
Eggs done? Cool in cold water
Toss lettuce with a bit of dressing
Top with ham, cheese, tomatoes, beans
Peel eggs, roughly chop
Add eggs to salad
Drizzle with more dressing
Serve Don't forget the fruit
