Beef Patties with Paprika Sauce
Parmesan Fries (Chips)
Peas with Parmesan

Cooking time:  35 minutes for menu          Cooking schedule: see below for instructions

     Burgers and Fries - always a favorite.  This will take care of the last bit of leftovers - the tomato sauce from Friday.

Beef Patties with Paprika Sauce                   Preparation and cooking time:   25 minutes
    We use 10oz and make 2 nice burgers.   The Paprika Sauce is a bit more 'adult' than the usual ketchup.  If you don't have tomato sauce, use 1/3 cup more chicken stock and 1 tbs more tomato paste.

10oz ground beef (300gr mince)
2 tbs dry breadcrumbs
1 tbs Dijon-style mustard
1 tbs Worcestershire sauce  
1 tsp paprika
1/2 tsp garlic powder
1 small onion 
1/3 cup (3oz, 90ml) tomato sauce 
1/3 cup (3oz, 90ml) chicken stock
1 tbs sherry vinegar
1 tbs tomato paste
1 tsp paprika

Mix breadcrumbs, mustard, Worcestershire, garlic powder and paprika.  Add beef and mix thoroughly - hands are best.  Shape into 2 or 3 patties. 
Roughly chop onion.  Heat oil in medium nonstick skillet over medium heat.  Add onion and sauté until starting to brown, about 8 minutes.  Add patties (moving onions to the side, but leave in pan) and sauté 5 - 7 minutes per side.  Remove burgers and keep warm.  Add paprika and sauté 1 minute.   Add tomato sauce, stock and vinegar, bring to a simmer, stirring up the browned bits.  Stir in tomato paste, spoon over burgers and serve.

Parmesan Fries (Chips)                                       Preparation and cooking time: 35 minutes 
     The Parmesan gets very brown and crunchy.  Finish with a light sprinkling of good sea salt.

2 medium potatoes, about 12oz (350gr)
1 tbs oil
1/2 tsp garlic powder
2 tbs grated Parmesan cheese
sea salt

Cut potatoes into sticks - about 1/3 inch (1cm square), no need to be precise.  Put oil, garlic, Parmesan in a bowl.  Add potatoes and toss well to coat.   Arrange on baking sheet.  Bake at 400F (200C) for 30 minutes.  Remove and serve immediately.

Peas with Parmesan                                   Preparation and cooking time:  15 minutes
    I try to keep prepared, canned and frozen food to a minimum, but some foods, like peas, I think are actually better frozen; as well as difficult to get fresh.  And easy is nice....  

8oz (250gr) fresh or frozen peas
1/4 cup (2oz, 60ml) chicken stock
2 tbs grated Parmesan

Put peas and stock into a small saucepan, cover and simmer until peas are hot and tender, about 10 minutes.  Uncover, add sprinkle with Parmesan, stir and serve.

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium nonstick skillet, small saucepan with lid.

Turn oven on, 400F (200C)
Grate Parmesan
Cut potatoes
Mix oil, Parmesan, garlic
Add potatoes, stir well to coat
Arrange on baking sheet, bake
Chop onion, sauté

Mix crumbs, mustard, Worcestershire, garlic, paprika
Add beef, mix, form patties, sauté
Put peas, stock in saucepan, cover, simmer
Turn patties
Remove patties
Sauté paprika
Add sauce, stock, vinegar
Stir in tomato paste
Spoon sauce over burgers
Remove fries
Sprinkle Parmesan on peas
Serve!
