Turkey with Almonds
Pasta with Spinach and Goat Cheese

      Thinly sliced turkey cutlets cook quickly and lend themselves well to all types of sauces and treatments.   If you can't find them you can substitute chicken breasts or get a turkey tenderloin or breast and either slice it yourself or have your butcher do it for you. I  used whole almonds, roughly chopped.

Total time: 15 minutes
     Much more economical than the traditional veal cutlets, breaded turkey with a light sherry and almond sauce is an impressive, but simple dish.

Pasta with Fresh Spinach and Goat Cheese (Chevre)

Total time: 30 minutes
     A little goat cheese brings the mushrooms and spinach together for this simple, healthy side dish.

Pasta with Fresh Spinach and Goat Cheese Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large nonstick skillet, medium skillet, pot, colander
for pasta, wax / parchment paper

Put water on high heat for pasta
Wash spinach if needed, roughly chop
Chop onion, mince garlic
Clean, chop mushrooms
Sliver almonds (or chop) if needed
Sauté onions, garlic, mushrooms
Dredge turkey cutlets in flour, lay on paper
Cook pasta
Heat oil in skillet, sauté cutlets

Turn cutlets
Mind the onions/mushrooms
Remove cutlets
Sauté almonds
Add sherry, stock to pan, deglaze
Thicken sherry/stock
Return cutlets to pan, cover, simmer
Add spinach to onions/mushrooms, stir-fry
Add soy sauce, goat cheese, yogurt to spinach
Drain pasta
Add pasta to skillet, toss to coat
Remove turkey to platter
Pour sauce over, sprinkle with almonds
Serve all
