Stuffed 8-Ball Zucchini (Courgette)
Shrimp with Capers, Lemon, and Feta on Orzo
Green Beans with Parmesan

      The little 8-ball zucchini are so cute; I couldn't resist stuffing them for a first course.  And shrimp with lemon and capers is always a treat. More feta will be used during the week.

Stuffed 8-Ball Zucchini (Courgette)

Total time: 35 minutes
courgette stuffed    The squash I used were about the size of a tennis ball.  I mixed a bit of Parmesan and breadcrumbs with the tomato to soak up some of the juices from the squash. If yours are larger, just do 1 and divide it.

 Ingredients:

Shrimp with Capers, Lemon, and Feta on Orzo

Total time: 25 minutes
  Shrimp with a Mediterranean flavor: capers, lemon, feta, black olives, served on a bed of herbed orzo.

Green Beans with Parmesan 

Total time: 25 minutes
   A simple treatment letting the full flavor of the green beans shine through.  Use either regular green beans or the flat Italian Romano beans.

Green Beans with Parmesan Ingredients:

 Instructions:

Cooking schedule: 40 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small bowl, baking dish, medium skillet, medium
saucepan and colander for orzo, small skillet, foil

Turn oven on, 400F (200C)
Put water on high heat for orzo
Hollow out zucchini
Chop tomato
Peel garlic, mince
Combine ingredients for stuffing
Stuff zucchini
Cover zucchini with foil, bake
Prepare shrimp
Juice lemon
Top and tail beans, cut
       Pause while the zucchini bake
Uncover zucchini, top with cheese, bake

Chop olives
Cube / crumble feta
Start to cook beans
Cook orzo
Remove zucchini, cut in half, serve
Done?
Drain orzo, add oil, set aside
Heat oil for shrimp
Remove beans
Sauté shrimp
Melt butter for beans, add beans, stir and heat
Mind the shrimp
Add lemon, capers, olives herbs to shrimp, heat
Arrange orzo on platter
Remove shrimp from heat, add feta stir
Spoon shrimp on orzo
Remove beans, add Parmesan, stir
Serve all
