Stuffed Bell Peppers, Americas Style

       I originally made these with Minute Rice, switched to regular rice...   Then I decided to make them interesting.  
I needed half of a pepper for Thursday, so I stuffed 2 1/2.... That way there was nothing left over ;-))

Stuffed Peppers, Americas Style

Total time: 40 minutes
    Quinoa makes it so much more interesting and adds a meatier texture to the finished peppers than the, more traditional, rice!  Use ground turkey if you prefer.... Something else I can't get.

Stuffed Peppers, Americas Style  Ingredients:

 Instructions:

Note: Keep any extra stuffing warm and serve on the side.

Cooking schedule: 40 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large pot, large skillet, small saucepan with lid,
baking dish, lid or foil

Turn oven on 400F (200C)
Put water on high heat for peppers
Start to cook quinoa
Clean peppers
Chop onion, celery, mushroom
Mince garlic
Sauté chili powder, paprika

Add onion, celery, sauté
Add garlic, mushrooms, sauté
Add beef and brown, breaking up
Dissolve cornstarch in water
Add stock, sauce, tomato paste, herbs, simmer
Stir in cornstarch, thicken
Add quinoa when done, mix well
Stuff peppers, cover, bake
Uncover peppers, spoon tomato sauce on top
Sprinkle with cheese
Bake just until cheese melts
Serve, any extra stuffing on the side
