       I buy goat cheese in 200gr (7oz) logs - my only choice.  I have half left from last week, so I did another baked goat cheese starter.  You could substitute another soft cheese: Brie, Camembert, or even Raclette - but don't bread Raclette, just melt and pour the sauce over.

   The slightly pungent goat cheese goes well with the slightly spicy red pepper sauce..

Cornish Game Hens with Herb Sauce

Total time: 1 hour 10 minutes
    Small, perfectly roasted hens make an elegant presentation for individual servings (with maybe a snack leftover).   Remember to put bowls for bones on the table - and wet towels for fingers.

Potato and Garlic Gratin

Total time: 70 minutes
   Simple ingredients but complex tastes.  Yes, there is a lot of garlic, but it bakes with the potatoes, turning soft and sweet and giving a wonderful flavor to the dish.  Discard the bay leaves.... This is based on a recipe from Provence the Beautiful

Sautéed Brussels Sprouts

Total time: 20 minutes
    A lot of people don't like Brussels Sprouts.  A lot of people over-cook them.  Think there's a relationship?  As with most vegetables, simple and quick is (usually) best.  

Sautéed Brussels Sprouts Ingredients:

 Instructions:

Cooking Schedule: 75 minutes for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
2 small saucepans with lids, baking sheet, plate,
baking dish for hens, rack, gratin dish / potatoes,
large bowl, medium nonstick skillet with lid, foil
Turn oven on 400F (200C), arrange 2 shelves
Prepare hens
Mix herbs, butter, place in hens
Arrange wings, tie legs
Rub with butter, sprinkle herbs, salt
Bake hens, with meat thermometer if possible...
Boil water
Peel, cut garlic
Slice potatoes
Put potatoes, oil in bowl, mix well
Assemble potato gratin
Pour water over, bake
           Take a 15 - 20 minute break.....
Back?
Pour oil over hens
Clean, trim, slice Brussels sprouts, set aside
Slice shallot for sprouts
Chop shallot for sauce, sauté with herbs

Heat Pepper sauce, add paste, herbs, vinegar
Cover to keep warm
Add flour to shallots for sauce, stir
Whisk in wine
Whisk in stock, simmer
Remove from heat, cover to keep warm
Mix crumbs, basil
Slice goat cheese
Dip cheese into crumbs, place on baking sheet
Wait for hens to be finished
When ready, remove hens, cover loosely / foil
Check potatoes, cover, remove or leave be.....
Bake goat cheese
Spoon Red Pepper sauce onto 2 plates
Sauté sprouts, shallots
Remove cheese, arrange on Red Pepper Sauce
Stir sprouts, shallots 
Serve goat cheese, relax, enjoy
Interrupt your starter once to stir sprouts
Done?  Stir sprouts, add stock, cover
Remove potatoes
Arrange hens on small platter
Put sauce in sauce boat
Finish sprouts, remove, serve all
