Roasted Pork Tenderloin with Potatoes, Apples and Carrots

      A few minutes of prep time and 40 minutes in the oven.  Perfect for midweek.  Just a bit of attention needed half way through to add the apples...

Pork Tenderloin with Potatoes, Apples and Carrots

Total time: 45 minutes
   Pork and apples naturally compliment each other: the sweet-tart flavor of the apple brings out the sweetness of the pork. With roasted potatoes and carrots this is a simple meal needing little attention.  Remember, slightly pink is fine for pork - and keeps it juicier.

Pork Tenderloin with Potatoes, Apples and Carrots Ingredients:

 Instructions:

Cooking Schedule: 45 minutes
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
medium nonstick skillet, baking dish, bowl
Turn oven on, 400F (200C)
Mix sugar, oil, vinegar
Cut potatoes, carrots into sticks
Add to oil mixture, stir to coat
Arrange in baking dish in single layer
Brush pork with any remaining oil mixture
Put pork on vegetables, bake

      15 minute break
Melt butter in small skillet
Cut, core, slice apple, add to butter, stir to coat
Remove pork
Turn pork, stir vegetables
Add apple wedges
Return to oven, roast
      20 minute break
Remove pork and vegetables
Arrange vegetables, apple on platter
Slice pork, serve
