Pork Chops and Cabbage
Buttered Potatoes

Classic home cooking, updated: Pork Chops with Creamed cabbage (but no cream and lots of sage) and simple buttered, boiled potatoes. I like the cabbage right on top of the potatoes, the true, old-fashioned way.
Pork Chops with Creamy Cabbage
Total time: 45 minutes
This is based on a recipe from the 'American Heritage' cook book I've for years. The cabbage has all the creamy goodness - without the cream. Use the apple juice if you have it - I buy the little 'juice boxes' for kids.
Ingredients:
- 2 - 4 pork chops, 12oz boneless (360gr)
- 1 onion, chopped
- 1 tbs olive oil
- 2 cups chopped cabbage
- 1/2 cup (4oz, 120ml) apple juice or chicken stock if using chicken stock add 2 tsp cider or white wine vinegar
- 1 tbs sage
- 1 tbs cornstarch (maizena) dissolved in
- 1/2 cup (4oz, 120ml) milk
Instructions:
- Cut a slice off the cabbage, avoiding the core, and roughly chop enough for 2 cups.
- Heat oil in large nonstick skillet over medium-high heat. Add onion, paprika, and sauté briefly, 2 minutes.
- Move to the side and brown pork chops on both sides, 6 - 8 minutes.
- Add cabbage, apple juice or stock, sage, cover, reduce heat and simmer for 30 minutes, stirring and turning chops once.
- Remove chops and increase heat.
- Dissolve cornstarch in milk and add to skillet. Stir until thickened.
- Put cabbage on platter, top with chops and serve.
Buttered Potatoes
Total time: 25 minutes
Sometime the simple things are best ....butter is optional!
Ingredients:
- 2 medium potatoes, 12oz total (360gr)
- 1 tbs butter
- salt & pepper
Instructions:
- Scrub potatoes and cut into quarters.
- Put into a sauce pan and cover with water to which you add 1/4 tsp salt.
- Cover and bring to a boil. When boiling move cover so it is ajar else the potatoes will boil over. They will, I promise.
- Remove from heat when done (stick a knife in and test - should go in easily).
- Drain, add butter, salt & pepper if using, and serve.
Cooking schedule: 45 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium saucepan with lid, large skillet with lid
Chop onion
Sauté onion, paprika
Chop cabbage
Add chops to skillet, brown
Clean, cut potatoes, put in saucepan with water
Turn chops |
Add cabbage, juice/stock, sage to pan
Cover, simmer
10 minute break
Cook potatoes, partially covered
Stir cabbage, turn chops once
15 minute break
Dissolve cornstarch in milk
Finish cabbage
Finish potatoes
