Spinach Burgers with Mushroom Sauce
Oven Fries

      Burgers and Fries.  What more can I say?  Except these are healthy.....

Spinach Burgers with Mushroom Sauce

Total time: 30 minutes
     Don't let the greenish tinge to these burgers put you off.  They fry up to a lovely dark, proper burger color, they taste fantastic and you get a healthy dose of vegetables almost without noticing!

Oven Fries

Total time: 35 minutes
   Cut in wedges and baked in the oven, these are quick, easy, and much lower in fat than traditional Fries.

Oven Fries Ingredients:

 Instructions:

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons,knives,
med. bowl, (used 2 X) skillet, 2 baking sheets, foil

Turn oven on, 400F (200C), arrange 2 shelves
Thaw spinach if using frozen
Mix oil, paprika, rosemary
Slice potatoes, add to oil, stir
Arrange potatoes on baking sheet, bake
Finely chop onions, celery, mushrooms, garlic
Chop spinach if using fresh
Sauté half of mushrooms, onions, celery garlic
Lightly beat egg
Squeeze thawed spinach, add to egg
Add fresh spinach to onion/mushroom mixture, cook

Add bread crumbs, wine,thyme to egg, mix
Add beef, sautéed vegetables, mix well
Form beef/spinach mixture into patties
Sauté patties
Turn fries if you like
Turn patties
     Pause while the burgers cook
Put patties on baking sheet, cover with foil
Sauté other half of mushrooms, celery, onions, garlic
Put patties in oven
Add stock, wine, tomato paste to vegetables in skillet
Dissolve cornstarch in wine
Stir cornstarch into skillet to thicken
Remove burgers, arrange on plate, spoon sauce over
Remove fries, serve
