         Simple summer cooking is this week's theme: barbecue, salads, make ahead meals....
We use more red onions in summer - they are a bit sweeter for salads. Substitute sweet or regular, as you prefer. Day 3 makes enough for 4 people - or more for a picnic..

Alubias con Tocino (Beans with Bacon)

Day 4:  Sweet and Sour Chicken Salad
Fresh Peach and Berry Salad

Day 5:  Inside-Out Burgers
Warm Green Bean and Brown Rice Salad

Day 6:  Grilled Chicken Breasts with Mustard Sauce
Roasted Carrots, Onions and Potatoes
