Chicken Breasts with Red-Eye Gravy
Soft Polenta with Leeks
Stir-Fried Carrots and Mangetout

      With the red-eye gravy we should really be eating grits.  Polenta is close.

Chicken Breasts with Red-Eye Gravy  

Total time: 30 minutes 
     It's the coffee that gives the name to this dish.  I use instant as I always have some on hand for caffeine emergencies.  Leftover from morning coffee works just fine - as long as it hasn't been on the burner all day ;-) I usually cut chicken breasts in half before cooking.

Soft Polenta with Leeks

Total time: 20 minutes 
       Check the package directions for quantity proportion - you may have to add more (or less) liquid to get a soft consistency. It can be adjusted at the end, before serving. This should be very thick but not stiff.

Sautéed Snow Peas (Mangetout) with Carrots  

Total time: 20 minutes 
   Remember canned Peas and Carrots?  This isn't it....  Stir-frying is a method of cooking, not a cuisine. Nothing says we can't use maple syrup rather than soy sauce as our flavoring.

Sautéed Snow Peas (Mangetout) with Carrots Ingredients:

 Instructions:

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
skillet with lid, medium skillet with lid, small
saucepan
with lid
Cut chicken breasts
Chop bacon/Prosciutto
Sauté paprika in oil
Add bacon/prosciutto, sauté
Trim, cut mushrooms, add to skillet
Cut carrots
Trim, cut snow peas
Add chicken breasts, brown
Slice onion
Turn chicken breasts
Trim, slice leek, sauté

Add coffee, stock, sugar to chicken, bring to boil
Cover, reduce heat, simmer
Add stock, herbs to leeks, heat
Sauté carrot, onion
Dissolve cornstarch in water
Add snow peas to carrots, sauté
Whisk polenta into stock
Add syrup, stock to vegetables, cover, simmer
Add milk, cheese to polenta, stir well
Remove polenta from heat, cover to keep warm
     Pause while stuff finishes
Remove chicken, increase heat
Finish carrots / snow peas
Thicken sauce
Pour sauce over chicken
Serve
