Sweet and Sour Chicken Breasts
Fried Potatoes and Onions
Broccoli with Garlic and Parmesan

Cooking time:  35 minutes for menu          Cooking schedule: see below for instructions

     The potatoes could be fried in goose or duck fat or bacon fat... I use olive oil. Use what you like....

Sweet and Sour Chicken

Total time: 30 minutes
     This is based on the Chinese Sweet and Pungent sauces, but with red wine and without the soy sauce.  A simple, skillet chicken.

Sweet and Sour Chicken Ingredients:


Sautéed Potatoes and Onions

Total time: 30 minutes
   A simple dish but so easy and full of flavor; cooking doesn't have to be complicated!

Fried Potatoes and Onions Ingredients:


Broccoli with Garlic and Parmesan

Total time: 25 minutes
  Watch the broccoli as it can go from perfect to over cooked and limp in a hurry.  Remove it from heat as soon as it's done.  It will be reheated when it's finished, so no need to keep it hot.

Broccoli with Garlic and Parmesan Ingredients:


Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large nonstick skillet, medium skillet with lid,
saucepan with steamer basket and lid

Chop onion, divide
Mince garlic, divide
Sauté onion for potatoes
Sauté onion for chicken
Cut chicken breasts in half if large
Slice potatoes
Add garlic to onion for potatoes, sauté
Move onions to the side, add chicken, brown
Remove onion/garlic, set aside
Add potatoes, sauté
Trim, cut broccoli
Turn chicken
Tend potatoes

Add wine, stock, vinegar to chicken, heat
Add sugar to chicken, stir
Add bay leaves, cover chicken, simmer
Mind the potatoes
Steam broccoli
Grate Parmesan
      Pause while stuff cooks
Dissolve cornstarch in water
Return onions to potatoes, sauté
Remove broccoli
Sauté garlic for broccoli
Increase heat under chicken
Add broccoli to garlic, toss to coat
Stir cornstarch into sauce for chicken, thicken
Remove chicken, spoon sauce over
Finish potatoes
Finish broccoli, sprinkle with Parmesan
