Pork and Celeriac Stew
Mashed Potatoes with Leeks

         It's a bit of work to get the stew cooking, then all is easy.  Celeriac vary in size: we'll use a bit more in the risotto on Sunday, and if you still have some left, add it to the pasta on Thursday.

Pork and Celeriac Stew

Total time: 1 hour 40 minutes
   The spices used in this are from a recipe for Wild Boar Stew, but work very well with domestic pork. The juniper berries give it a wintry, woodsy flavor.  If you have the time, marinate the pork in the red wine for a few hours before cooking. This makes enough for 2 meals.

Mashed Potatoes with Leeks

Total time: 30 minutes
       I always make enough to use in another meal - patties, or Shepherd's Pie, or something....

 Instructions:

Cooking Schedule: 100 minutes for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium pot or dutch oven, medium saucepan with
lid, small skillet with lid

Cut pork into pieces, brown
Peel, mince garlic
Peel, slice onion
Peel, cut carrot
Mind the pork
Peel, cut celeriac, put in water, wrap, refrigerate rest
Chop Prosciutto
When pork is browned, remove
Add onions, Prosciutto, garlic to pan, sauté
Return pork to pan

Add rest of the ingredients, cover, simmer
      45 minute break
Back? Trim, slice leeks
Peel, cut potatoes
Cook potatoes
      15 minute break
Sauté leeks
Drain, cook off potatoes
Add milk to leeks, cover, turn off heat
Mash potatoes, add leeks, cover to keep warm
Remove pork and vegetables
Dissolve cornstarch in water
Increase heat, thicken sauce
Spoon some sauce over pork
Serve
