Meat Loaf Florentine
Roasted Spicy Sweet Potatoes

            I'm not sure which we like better: meat loaf or the, inevitable and much-loved, meat loaf sandwiches.  Don't be out off by the green color  - it tastes right!  ;-))

Meat Loaf Florentine 

Total time: 80 minutes
     While this meat loaf is chock-a-block with vegetables it still retains the 'proper' meat loaf taste and texture.  We'll eat it for 2 meals - and there may be enough for a couple of great sandwiches as well. I actually used about 19oz (540gr) in this because I had some bits in the freezer to use up.

Spicy Sweet Potatoes

Total time: 35 minutes
   These get a bit crusty on the outside and incredibly soft and creamy on the inside.  These had white interiors, but were most definitely sweet potatoes.  The heat went well with the sweet. They work equally well in the oven or on the barbecue.

Spicy Sweet Potatoes Ingredients:

 Instructions:

Cooking Schedule: 80 minutes for menu
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
large skillet, baking pan, baking tray, medium bowl

Turn oven on, 400F (200C); arrange 2 shelves
Chop onions, sauté
Chop celery, add to onions
Chop carrot, add to skillet
Mince garlic, add to skillet
Chop mushrooms, add to skillet
Add spinach to skillet
Whisk eggs
Add crumbs, wine, ketchup, herbs to eggs
Mix well, add meat, mix
Spread vegetables on plate to cool a bit

Mix oil, herbs, spices for potatoes, set aside
Add some veg to meat, mix
Add more veg to meat, mix
Finish meat loaf, shape and start to bake
     30 minute break
Cut potatoes, add to oil mix, stir
Put potatoes on baking tray, bake
     15 minute break
Uncover meat loaf, pour on tomato sauce, bake
Stir potatoes
     15 minute break
Remove meat loaf, let rest
Remove potatoes
Cut meat loaf in half, put half on platter
Slice meat loaf, Serve all
