Pork Lo Mein with Peanut Sauce

     Lo Mein is simply a stir-fry with noodles, spaghetti, in this case. I would normally put peanuts with this but, I have walnuts (3 trees) and rather liked the effect.  Besides, they're good for us! Everything cooks in less time than the spaghetti.

   Stir-fries cook quickly and are very flexible when it comes to ingredients.  I always try for a mix of colors, textures and flavors... And whatever is left in the fridge.  Amounts are not precise, just try to keep it balanced.

Pork Lo Mein with Peanut Sauce  Ingredients:

 Instructions:

Cooking schedule: 25 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
pot and colander for pasta, large skillet, whisk,
small bowl, large plate for organizing vegetables
Put water on high heat for pasta
Slice onions
Mince garlic, ginger
Cut pepper, carrot
Trim, slice mushrooms
Cut broccoli
Cut pork
Start to cook pasta

Heat oil in large skillet, medium-high heat
Add onions, stir-fry
Add garlic, ginger, stir-fry
Remove onions, garlic
Add sesame oil, remaining vegetables
Stir-fry
Add pork, return onions, et all
Add stock, boil, cover, reduce heat, simmer
Mix peanut butter, sherry, soy sauce
Dissolve cornstarch in water
Add walnuts, peanut butter mix to skillet, stir
Stir in cornstarch, thicken
Drain pasta, add to skillet, combine and Serve
