Menu Plan for Spring I: Week 5, Day 1

Pan-Fried Salmon with Lemon and Capers
Barley with Green Garlic
Sautéed Mangetout (Snow Peas) & Mushrooms

      Green garlic looks like a green onion or very small leek and has a wonderful, mild garlic flavor.  Use it all, including the green tops. Fresh lemon adds a bright note to simple pan-fried fish... We're pan-frying lately as it rains every time we try to barbecue.

Pan-Fried Salmon with Lemon and Capers

Total time: 15 minutes
    Lemon and capers combine to add lots of flavor to this simple preparation.  Quickly seared, they can finish cooking over low heat while you enjoy your starter.

Barley with Green Garlic

Total time: 25 minutes
     Barley is a hearty, nutritious grain; easy to cook and flavorful. Here we dress it up for spring with fresh chives and green garlic.

Sautéed Snow Peas (Mangetout) & Mushrooms

Total time: 10 minutes
     The mushrooms give a bit of meaty flavor and 'weight' to the delicate snow peas and contrast nicely with their crisp crunch.

Snow Peas with Mushrooms Ingredients:

 Instructions:

Cooking Schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large skillet with lid, medium skillet, 2 small
saucepans with lids
Trim, slice green garlic
OR trim, slice leek, mince garlic
Sauté green garlic (leeks, garlic)
Slice lemon, remove pips
Snip herbs if using fresh
Add barley, stock to saucepan, cover, cook
Heat stock, white wine

Trim, cut snow peas
Dissolve cornstarch in water, stir into sauce
Finish sauce
Fry salmon
Trim, slice mushrooms
Turn salmon
Sauté snow peas, mushrooms
Add lemon, capers, chives to salmon, cover, cook
Finish barley
Spoon sauce onto plates
Remove salmon, plate, top with lemon, capers
Finish snow peas, serve
