Tomato Meatball Soup
Oatmeal Drop Biscuits

             Soup for Sunday supper.  It should be a tradition...  It's an easy way to end the weekend, whether it simmers on the stove all day or goes together in under an hour, like this one. This is a pantry soup, not requiring simmering beef or chicken bones, but opening rather more cans than we usually do... Unless you are lucky enough to have last summer's tomatoes in your freezer.... Have fresh fruit for dessert rather than the biscuits if so inclined.

Tomato Meatball Soup

Total time: 50 minutes
    This is a quick soup (as soups go). Use any small pasta: orzo, small elbow, vermicelli; or break spaghetti into 3" (7cm) lengths.  Add more chili powder or hot sauce if you like.  Best of all it has meatballs... We love meatballs. This serves 4 - 5... or 2 meals for two with, maybe a lunch leftover.  It freezes well, too.

Oatmeal Drop Biscuits

Total time: 20 minutes
      Very easy, just drop and bake.  The egg and 3 tsp of baking powder make these raise quickly and get quite large and light.

Oatmeal Drop Biscuits Ingredients:

 Instructions:

Cooking Schedule: 50 minutes for menu
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
Dutch oven or soup pot, bowl, pastry cutter or forks,
baking sheet, 3 medium bowls, whisk

Heat stock, tomato juice
Mix egg, crumbs, herbs, Worcestershire
Add beef, mix well
Make meatballs
Slowly add meatballs to soup when soup is boiling
Chop onion, add to soup
Slice carrots, add to soup
Slice celery, add to soup
Slice cabbage, add to soup
Open tomatoes, drain, add juice to soup

Chop tomatoes, add to soup 
   If any tomato sauce in fridge, add to soup
Add herbs, everything else (not pasta) to soup
Cover, simmer
Turn oven on 400F (200C)
     Pause a minute, tidy the kitchen, stir the soup
Put dry ingredients for biscuits in bowl
Cut in butter
Add pasta to soup, stir
Whisk eggs, milk honey
Add wet ingredients to dry, stir gently
Divide dough, drop on baking sheet, bake
Stir the soup
     Pause while stuff finishes
Remove biscuits, serve soup
