Polenta with Salmon, Chevre and Pimiento Sauce
Lamb Chops with White Beans
Hashbrown Potatoes

        The lamb and white beans are a classic in our kitchen.  It's a simple dinner, but worthy of company.  We'll be using more pimiento in the lasagne tomorrow.

Confetti Polenta with Salmon, Chevre and Pimiento Sauce

Total time: 25 minutes
     Finely chopped pimento and chives in the polenta adds lots of color as well as flavor... And resembles confetti.  Goat cheese and Pimento sauce have long been a favorite combination.

Lamb Chops with White Beans

Total time: 30 minutes
      Some people always serve mint sauce with lamb.  I prefer lentils or white beans.   You can substitute Pork Chops, if you prefer, just cook a bit longer, although even pork can be faintly pink inside...

Hashbrown Potatoes

Total time: 30 minutes
      The only trick to making great hashbrown potatoes is patience.  Pat them in the skillet and let them fry!

Hashbrown Potatoes Ingredients:

 Instructions:

Cooking Schedule: 40 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan (used 2 X), blender, ramekins, cling
film, medium saucepan with lid, large skillet,
medium skillet

Shred potatoes
Melt butter, add oil, potatoes, sauté
Heat stock in small saucepan for polenta
Chop all pimiento
Add polenta to stock, stir
Add 1 tbs pimento, chives to polenta
Line ramekins with film - no need to be precise, oil
Spoon polenta into ramekins, smooth, set aside
Chop all shallots
Sauté shallots for Pimiento sauce in small saucepan
Sauté shallots for beans in medium saucepan
Chop carrot, add to medium saucepan
Mince garlic, add to medium saucepan
Add pimiento, stock, thyme to small saucepan

Roughly chop tomatoes, add to carrot/shallot
Remove polenta, place on plates
Purée pimiento sauce
Add sage, beans, wine to carrot/tomato, cover, cook
Turn potatoes
Sprinkle rosemary, garlic on lamb, set aside
Finish pimiento sauce
Slice salmon, arrange by polenta
Spoon goat cheese on top of polenta
Spoon Pimiento sauce next to polenta
Stir beans, reduce heat to very low
Serve starter... Relax... Enjoy

Stir beans
Sauté lamb chops
Put potatoes on small platter
Turn lamb chops
Add vinegar to beans, stir
Arrange lamb chops, beans on platter,
Serve
