Cream of Celery Soup
Crusted Sole
Orzo Florentine

Cooking time:  40 minutes for menu          Cooking schedule: see below for instructions

       An easy dinner for the end of the week.  The sole and orzo are in the oven while you have the soup; just remove and serve.

Cream of Celery Soup

Total time: 25 minutes 
      This is vastly different then the stuff in the can.  The potato gives it the creaminess, with just a bit of milk to finish to give it a velvety texture.  The green pepper enhances both the color and the flavor.

Crusted Sole

Total time: 15 minutes
     Sole is a delicate, flavorful fish.  Here it has a light coating of crumbs.... Not so much as to overwhelm it.

Orzo Florentine

Total time: 40 minutes
   Florentine, or 'cooked in the style of Florence', means that there is spinach in the dish. Here the spinach is combined with cooked pasta and shredded cheese and baked until bubbly.

 Instructions:

Cooking Schedule: 40 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
dish for thawing spinach, 2 small saucepans, lids,
blender, plate, baking sheet, medium bowl,
baking dish

Turn oven on, 375F (190C), arrange 2 shelves
Finely chop shallots, sauté
Chop onion for soup, sauté
Chop celery, add to onion
Cut pepper in half, clean, refrigerate half
Cut 3 paper-thin slices from pepper
Chop rest of pepper, add to onion
Add orzo to shallots
Add stock, herbs to orzo, cover, simmer

Cut potatoes, add  to soup
Add herbs, stock to soup, cover, simmer
Thaw spinach
Mix crumbs, herbs on plate
Lightly oil baking sheet, baking dish
Shred, grate cheeses
Squeeze spinach dry
Mind the orzo
Purée soup, return to heat, add milk, keep warm
Dip sole in crumbs, lay on sheet, drizzle oil
Combine orzo, cheeses, spinach, put in baking dish
Bake sole, orzo
Ladle soup into bowls, garnish with pepper, serve
Done?
Remove Sole, Orzo, Serve
