Creamy Broccoli Soup

      I used thick cod filets for the fish dish, (here called the back of the cod). If you use thinner filets, baking time is considerably less. Save the braising stock from the endive for the risotto.

Creamy Broccoli Soup

Total time: 30 minutes  
     Vegetable soups make a perfect winter first course.  They're easy, warming and healthy.  The 'cream' in this soup comes from yogurt or milk. A hint of 'heat' comes from the hot mustard.

Cod with White Wine Mustard Sauce

Total time: 25 minutes  
   
Any nice filet of white fish would be good: walleye, sole, catfish, cod, snapper, for this simple dish. The shallots are lightly sautéed and finished with a bit of wine, stock and tarragon.

Orzo with Browned Butter

Total time: 25 minutes
   The orzo is made like traditional pasta, cooked in a large volume of boiling water, drained and finished with a sauce - in this case, simple Browned Butter.

Braised Endive

Total time: 35 minutes
     The braised endive is finished with a dash of white Balsamic vinegar, a bit of cheese and a sprinkle of olives.

 Instructions:

Cooking Schedule: 40 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan with lid, medium saucepan with lid,
baking sheet, large skillet with lid, pot and strainer for
pasta,
blender
Turn oven on 400F (200C)
Put water on high heat for orzo
Chop onion for soup, sauté
Chop broccoli
Add stock, herbs, broccoli to onion, cover, simmer
Prepare fish, set aside
Trim, slice endive
Put endive, stock in skillet, cover, braise
Chop shallot for sauce, sauté
Shred cheese
Chop olives
Add stock, wine, mustard, herbs to shallot, simmer

Purée soup
Return soup to saucepan, heat, add mustard
Adjust soup for consistency, heat through
Dissolve cornstarch in water
Thicken sauce, remove from heat, cover, keep warm
Bake fish
Add milk, cheese to soup, stir until cheese melts
Cook orzo
Remove endive from heat if close
Ladle soup into bowls, sprinkle with cheese, serve
Done? Drain orzo
Melt butter, brown
Remove cod
Drain endive, sprinkle vinegar, add cheese, cover
Mind the butter
Finish fish
Finish endive
Add orzo to butter, finish, serve
