Turkey with Sherry and Prosciutto
Cauliflower Gratin

    This is a slight variation on the traditional 'Newburg' using dry, air-cured ham in place of bacon.  I think the ham adds more flavor and a subtle woodsy tone more complex than the bacon.

Turkey with Sherry and Prosciutto

Total time: 25 minutes
   Any cut of turkey breast will work for this. Or you could use chicken breast.  Amontillado is a semi-dry sherry, between 'fino' and 'cream'.  Use any sherry you have on hand.

Cauliflower Gratin

Total time: 35 minutes 
    Sliced cauliflower, sprinkled with shallots and topped with cheese: a simple gratin.

 Instructions:

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
pasta pot and colander, baking dish with lid or foil,
large skillet with lid

Turn oven on 400F (200C)
Put water on high heat for pasta
Break cauliflower into large florets, slice thickly
Chop shallots
Lightly oil baking dish
Layer cauliflower, shallots, cauliflower
Top with cheese, stock, cover, bake
Cut turkey
Slice Prosciutto

Clean, slice mushrooms
Sauté mushrooms, ham
Add turkey, sauté
Start to cook pasta
Add stock, sherry, rosemary, sugar to turkey
Cover, simmer
Uncover cauliflower
     Pause while stuff cooks
Dissolve cornstarch in water
Thicken sauce for turkey
Drain pasta; arrange on platter
Spoon turkey / mushrooms, ham on top
Remove cauliflower
Serve
