Grilled Golden Chicken
Simple Pasta Salad
Sautéed Zucchini (Courgette) with Pepper and Tomato

Cooking time:  30 minutes for menu          Cooking schedule: see below for instructions

     Did I mention it was zucchini season?  If you have a garden, use small zucchini, often and you won't ever get the monsters.

Golden Chicken Breasts, Grilled                        Preparation and cooking time: 30 minutes
   When you are marinating any sort of meat it helps to poke a fork into it a few times, then turn the meat several times to soak up the marinade.  The orange marmalade and sherry give the chicken sweetness, while the ginger and garlic add some heat.

2 boneless, skinless chicken breasts
3 tbs soy sauce
3 tbs orange marmalade
3 tbs dry sherry
1/4 tsp powdered or 1 tsp fresh, chopped ginger
1/2 tsp garlic powder - or 2 cloves minced

In small bowl mix all ingredients for marinade.  Put chicken breasts in shallow baking dish (or something with sides) and pour marinade over.  Let marinate for 15 minutes.   Cook on barbecue grill for 12 - 15 minutes or until done.  Test by taking a peak - stick a knife in the center and see if it is still pink - if it is, cook another 5 minutes.  Can also be baked in 400F oven for 20 - 25 minutes or until done - test.  Remove and serve, sliced if you like.

Simple Pasta Salad                                          Preparation and cooking time:  25 minutes
    Simple for summer

1 cup pasta   fusilli, penne, something bite-size
4oz (120gr) cherry tomatoes, yellow and red
3 tbs fresh, snipped basil
2 tsp Dijon-style mustard
2 tbs white Balsamic vinegar
2 tbs good olive oil

Cook pasta according to package instructions.  Drain. Rinse lightly and drain again.
Snip large basil leaves, keeping small leaves whole. Cut cherry tomatoes in half. 
Put mustard, vinegar and oil in a large salad bowl. Whisk together. Add pasta, tomatoes and basil.  Stir well to coat. Serve.

Sautéed Zucchini Pepper and Tomato        Preparation and cooking time:   20 minutes 
    We like smaller zucchini (courgette).  They have a better flavor.  This is more of a 'summer melange' than just another zucchini dish.   

1 courgette (zucchini), about 8" (20cm) long
1 small onion 
1/2 green pepper
1 medium tomato
2 cloves garlic
1 tbs soy sauce
1 tbs Balsamic vinegar
1 tbs olive oil

Slice zucchini in half the long way, then in slices the short way, about 1/4" (1cm) thick. Roughly chop pepper, onion and tomato.  Mince garlic. 
Heat oil in a large nonstick skillet over medium heat.  Add onion, pepper and sauté for 5 minutes.  Add garlic, zucchini and sauté until zucchini is just tender, 5 minutes longer.  Add tomato and sauté until it starts to soften, 2 - 3 minutes.  Stir in soy sauce, vinegar, and serve.

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
scissors, whisk, small bowl, dish for marinating, pot
and colander for pasta, salad bowl, large nonstick
skillet, barbecue grill

Put water on high heat for pasta
Turn on barbecue grill if using
Make marinade, spoon over chicken
Slice zucchini
Chop pepper, onion, tomato
Mince garlic
Start to cook chicken

Start to cook pasta
Sauté pepper, onion
Add garlic, zucchini, sauté
Turn chicken
Cut cherry tomatoes
Snip basil
Mix mustard, vinegar, oil for salad
Add tomato to zucchini, cook
Add soy, vinegar to zucchini, remove from heat
Remove chicken, set aside
Drain pasta, rinse lightly, add to bowl
Add cherry tomatoes, basil to pasta, stir well
Slice chicken, if desired, serve
