     Use the leftover reserved tomato sauce - if you don't have it, use the tomato paste.

Roasted Butternut Squash Slices with Rosemary

Total time: 35 minutes
     Simple perfection.  Slices of butternut squash, dipped in olive oil, sprinkled with rosemary and a bit of salt and roasted until they start to get crispy and caramelized.

Note:  To clean butternut squash first peel it, using a potato/vegetable peeler.  If it's large (typically) cut it in half between the 'neck' and 'bowl' ends.  Then cut those in half the 'long' way.  Scoop the seeds out of the round end and discard.  I use the neck end for uniform pieces and the bowl end for soups and smaller pieces.

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
pot and colander for pasta, medium skillet with lid,
large bowl (used 2 X)
, plate, baking sheet
Turn oven on, 400F (200C)
Put water on high heat for pasta
Clean butternut squash if needed
Mix oil, salt, rosemary
Slice squash, add to bowl, coat
Arrange squash on baking sheet, bake
Chop onion, mince garlic
Whisk egg in bowl
Add all ingredients for meatballs (not beef) mix
Add beef, mix well

Sauté paprika
Add onion, garlic, sauté
Make meatballs, put on plate
Add wine, stock, tomato to onions, simmer
Add meatballs to sauce, cover, simmer
Cook pasta
Turn squash
    10 - 15 minute break (depending on pasta)

Dissolve cornstarch in water
Stir cornstarch into skillet, until thickened
Drain pasta, put in serving bowl
Spoon meatballs, sauce on Pasta
Remove butternut squash slices
Serve and eat
