Grilled Lemon Chicken Breasts

If you have any leftover beans from Saturday, finish them tonight. As to the Pasta, I call it a Salad... It's served warm or cold, you can add the cooked sliced chicken on top or not. It's a very flexible dinner - as summer cooking should be!
Grilled Lemon Chicken Breasts
Total time: 30 minutes
Chicken breasts are a favorite on the grill but be careful not to overcook or they tend to dry out. We prefer to slice them thinly, at an angle, to serve rather than leaving the breast whole, but that, of course is optional!
Ingredients:
- 2 chicken breasts, boneless, skinless
- 3 tbs olive oil
- 2 tbs lemon juice
- 2 tbs orange marmalade substitute 1 tbs honey
- 1/2 tsp garlic powder
- 1 tsp dried tarragon leaves
- 1/4 tsp ground ginger
Instructions:
- In small bowl whisk together oil, juice, marmalade, garlic, tarragon and ginger.
- Put chicken in shallow glass baking dish and pour marinade over. Let marinate 15 - 30 minutes.
- Cook on barbecue grill 15 - 20 minutes or on baking sheet in oven (400F) for 25 - 30 minutes or until done.
- When done (knife poked in and juices run clear) remove from heat, slice and serve.
Pasta with Fresh Avocado Sauce
Total time: 25 minutes
Pasta with a creamy avocado sauce and fresh, chopped tomato. The avocado is heated, just slightly, to make it easier to mash and combine with the other ingredients. You could use milk in place of the yogurt.
Ingredients:
- 1 cup (3.3oz, 95gr) dried pasta
- 1 ripe avocado
- 1 garden ripe tomato
- 1/4 cup (2oz, 60gr) Greek or plain yogurt
- 1 tbs white Balsamic vinegar
- 1 tbs salad olive oil
Instructions:
- Cook pasta according to package directions. Drain.
- Cut avocado in half around the pit and twist halves -
they come apart neatly.
- Remove pit by inserting a medium-size spoon under the avocado, on the large end, as if you are lifting the avocado out of the shell. You will see the pit loosen; just tip the avocado over and it will fall out.
- Remove each half by scooping with a large spoon.
- Roughly chop avocado.
- Heat oil in a small saucepan. Add the avocado and heat, mashing with a fork or potato masher, chunky is fine.
- When mashed to your satisfaction, stir in yogurt (or milk) and vinegar. Stir well to combine and remove from heat.
- Roughly chop tomato.
- Put pasta in a bowl, add avocado sauce and stir to combine.
- Add tomato and mix in gently. Serve.
Braised Green Beans with Tomatoes, Onion and Basil

Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small bowl, dish for marinating, large pot for pasta,
colander, small saucepan, fork or masher,
barbecue
grill or skillet
Put water on high heat for pasta
Make marinade, spoon over chicken
Light/ turn on barbecue grill
Pit, chop avocado
Make avocado sauce
Chop tomato |
Wait for water to boil...
Start to cook pasta
Start to cook chicken
Remove beans from fridge, gently reheat
Pause while stuff cooks
Turn chicken
Drain pasta
Add sauce to pasta, mix
Remove chicken, let rest
Add tomato to pasta, mix gently
Slice chicken
Arrange chicken on pasta,
Serve all |
