Tomato Flan with Couscous Salad
Pork and Celeriac Stew

         It's a bit of work to get the stew cooking, then all is easy.  Celeriac vary in size: we'll use a bit more in the risotto on Sunday, and if you still have some left, add it to the pasta on Thursday. The rest of the Stew and Mash will be used on Monday.

       Tomato Custard!  Light, and easy to make, it's surrounded by a bit of couscous salad

Pork and Celeriac Stew

Total time: 1 hour 40 minutes
   The spices used in this are from a recipe for Wild Boar Stew, but work very well with domestic pork. The juniper berries give it a wintry, woodsy flavor.  If you have the time, marinate the pork in the red wine for a few hours before cooking. This makes enough for 2 meals.

Mashed Potatoes with Leeks

Total time: 30 minutes
       I always make enough to use in another meal - patties, or Shepherd's Pie, or something....

Mashed Potatoes with Leeks Ingredients:

 Instructions:

Cooking Schedule: 100 minutes for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium pot or dutch oven, medium saucepan, lid,
small skillet, lid, ramekins, baking or bread pan,
medium bowl, 2 small bowls, 1 lid, whisk,
medium bowl, small saucepan,
oven-safe dish
Cut pork into pieces, brown pork
Peel, mince garlic
Peel, slice onion
Peel, cut carrot
Mind the pork
Peel, cut celeriac, put in water, wrap, refrigerate rest
Chop Prosciutto
Remove pork, add onions, Prosciutto, garlic, sauté
Return pork to pan
Add rest of the ingredients, cover, simmer
      45 minute break
Back?  Turn oven on, 450F (220C)
Prepare ramekins
Slice olives
Whisk eggs, tomato sauce, yogurt
Pour into ramekins, add olives
Put ramekins into pan with hot water, bake
Trim, slice leeks

Peel, cut potatoes, cook potatoes
      Stand around while stuff cooks
Heat stock for couscous
Sauté leeks
Put couscous in small bowl, pour stock over, cover
Add lemon to water in medium bowl
Chop celeriac, add to lemon water
Mix yogurt, mayo, mustard
Add milk to leeks, cover, turn off heat
Drain, cook off potatoes
Mash potatoes, add leeks, put into oven-safe dish
Drain celeriac, add dressing, stir well
Add celeriac / dressing to couscous
Remove flans from oven
Turn oven off, leave door open a bit to cool
Remove flans from ramekins, place on plates
Spoon Couscous Salad around flans
Put potatoes into oven (should have cooled a bit)
Serve flans 
Done?
Remove pork and vegetables
Dissolve cornstarch in water
Increase heat, thicken sauce
Spoon some sauce over pork
Remove potatoes and serve
