Yorkshire Pudding Pie

Cooking time:  45 minutes, 30 minute break, for menu      Cooking schedule: see below for instructions

         Another easy, one-dish dinner;  this one based on Yorkshire Pudding.  Check freezer for any odd bits of meat - anything will work.  Winter supermarket tomatoes work just fine in this.

Yorkshire Pudding Pie

Total time: 45 minutes  
    Filled with peppers, onions and spinach, this is a savory pie for a one-dish dinner.  I use a bit of sausage in this but you could easily use cooked chicken, beef or ham; just not too much or it won't 'puff' properly.  Any leftovers are great for breakfast!

Yorkshire PuddingPie Ingredients:

 Instructions:

Cooking schedule: 45 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
medium skillet, medium bowl, whisk, baking dish

Turn oven on 425F (215C)
Chop onion, garlic, pepper, celery
Sauté onion, pepper, celery, garlic
Thaw spinach
Add sausage to skillet, brown

Squeeze spinach dry
Add spinach, basil to meat
Whisk eggs
Add milk, flour, salt, nutmeg, whisk
Prepare baking dish, pour in batter
Add spinach/meat, tomatoes, cheese
Bake pudding
    30 minute break
Serve, enjoy!
