Hamburger Steak with Cheese and Fried Onions
Potato Carrot Pancake

Cooking time:  30 minutes for menu          Cooking schedule: see below for instructions

     Okay, Hamburger Steak is an oxymoron, but it sounds more like a nice dinner than Burger Patty..... Whatever - it's easy and delicious. Yes, they're a big.... Make them even bigger if you like.

Hamburger Steak with Cheese, Fried Onions     Preparation and cooking time: 20 minutes
    Just a big burger topped with cheese and fried onions.  Nothing fancy, simple, 'diner' style cooking... These are Fried Onions, not Caramelized Onions....

12oz ground beef (mince - 350 gr)
2 medium onions
1 tsp Worcestershire Sauce
2 tsp olive oil
1oz (30gr) cheese, Colby or Cheddar, sliced 

Thickly slice onions.  Heat oil in a large nonstick skillet over medium-high heat.  Add onions and quickly fry until very brown and starting to crisp.  Add Worcestershire and stir well to combine.  Remove and set aside.
Return the skillet to medium-high heat. Divide the beef and make 2 loose patties, barely handling the meat.  (I just cut the package in half).  Add the beef and sauté, 2 - 5 minutes per side, depending on how you like it done.  When ready, lay the sliced cheese on the beef, top with onions and cover until cheese melts. 
Remove and serve.

Potato and Carrot Pancake                              Preparation and cooking time:  30 minutes
   This is a variation on the Potato Leek Pancake that is one of my kitchen staples. Easy to make: just shred the vegetables, combine and fry.

2 medium potatoes (12oz, 350gr total)
2 medium carrots
2 tsp butter
2 tsp olive oil
salt and pepper

Shred the potatoes and carrots using the large holes on a grater.   Put them in a bowl, add a bit of salt and pepper and combine well.
Heat 1 tsp butter and 1 tsp oil in a medium nonstick skillet.  Add the potato/carrot mixture, flatten as best you can with a spatula, cover and cook over medium heat about 15 minutes, or until starting to brown - take a peak around the edges.
Put a plate (or tray) on top of the skillet.  Grabbing the plate and skillet together (with hot pads) flip them over so that the pancake is on the plate.  Add remaining butter and oil to skillet and slide the pancake back into the pan to cook the other side, another 7 - 10 minutes, but don't cover.  When done, slide onto a plate, cut into wedges and serve.

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large skillet with lid, medium nonstick skillet with lid,
grater, bowl

Wash potatoes, peel carrots
Shred potatoes, carrots
Combine potatoes, carrots, salt, pepper
Heat butter, oil in skillet
Add potatoes, carrots, pat down, cover, cook
Peel and thickly slice onion
Fry onion

    Stand around while stuff cooks
Make Hamburger Steaks
Add Worcestershire to onion
Turn Potato Carrot Pancake
Add butter, oil to pan, return pancake
Remove onions, add burgers, fry
Slice cheese
Flip burgers
    pause.....
Top beef with cheese, onions, cover to melt
Remove pancake, cut
Remove beef, serve
