Lentil and Meatball Stew
Brown Rice

Cooking time:  20 minutes for menu      Cooking schedule: see below for instructions

      There are some things, like soups and stews, that are just better when made in larger quantities.  The timing on this dinner is solely dependent on the rice!

Lentil and Meatball Stew                                                       Time: 20 minutes
    If the stew seems dry, which it can as the lentils can absorb more liquid, add a bit of beef stock or tomato sauce.  This is equally good served with pasta but, nutritionally, brown rice complements lentils very well, so that is our choice.

1/4 - 1/2 cup beef stock

Put stew in saucepan or dish for microwave, add stock if needed.  Gently reheat and serve.

Brown Rice                                                    Time: 20 minutes or whatever your package says
     I use 'Uncle Ben's' which is all I can get and it is quick cooking.  It looks like brown Basmati and cooks in 20 minutes.  Substitute Basmati.

1/2 cup quick-cooking brown rice
1 beef stock or whatever your rice calls for

Cook rice according to package instructions. Fluff and serve.

Cooking schedule: 20 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan with lid, medium saucepan or micro dish

Cook rice
Reheat stew
     Break while that happens
Serve
