This week on the Menu Plan:
The summer vegetables are tapering off and the fall ones appearing: Butternut and acorn squashes for me, probably more of a variety for you. Other than spaghetti squash, they are interchangeable, within reason, in the recipes. It's difficult to peel an acorn squash or pumpkin, because of the ridges, so they are easier cooked in the shell. Butternuts have a small cavity so they are not best for stuffing. They all are great roasted, either peeled or not!
