Fried Gnocchi with Goat Cheese

Gnocchi, boiled first, then fried, gets very light with a wonderful, crunchy exterior. The cheese is added and allowed to melt briefly before serving.
Ingredients:
- 20 - 24 fresh gnocchi 1/3 of a package of fresh gnocchi
- 2 tsp olive oil
- 1 tsp paprika
- 4oz (120gr) goat cheese
- 10 green olives or any you prefer
- truffle oil, optional
Instructions:
- Heat water in a medium pot for gnocchi.
- When boiling, add the gnocchi and cook just until they all float, 1 - 2 minutes. Drain.
- Heat 2 tsp oil in a medium nonstick skillet over medium-low heat. Add gnocchi and sauté until light brown, stirring and turning occasionally, 12 - 15 minutes.
- Cut goat cheese into slices, then quarter the slices.
- Cut olives in half.
- When gnocchi are brown, add the paprika and sauté 1 minute longer.
- Add the goat cheese, olives, cover and remove from heat.
- Allow to rest 1 minute, then stir once or twice, divide and serve.
- Drizzle with Truffle Oil if using.
