Creamy Pesto Orzo

    This seems incredibly decadent, rich and creamy, but it's really not.  There is no cream or extra cheese or butter, it's all in the cooking technique.  But you do have to stir every 3 - 4 minutes to keep from sticking... and to make it creamy.

 Ingredients:

• 2 tsp olive oil
• 1/2 cup (4.5oz, 130gr) orzo
• 1 1/4 cups (10oz, 300ml) chicken stock
• 3 tbs prepared pesto

 Instructions:

• Heat oil over medium heat in small saucepan. 
• Add orzo and cook for 1 minute, stirring constantly. 
• Add stock and bring to a simmer. 
• Turn heat to low and simmer until done, about 20 minutes, stirring often.
•  Stock will be almost absorbed.  Do not let it become dry, it should be a bit 'soupy' when you take it off heat. 
• Remove from heat and stir in pesto. 
• Either serve immediately or cover and let rest, off heat, for up to 10 minutes.
