Beef Patties with Mushrooms
Quinoa with Mushrooms
Cauliflower with Horseradish

Cooking time:   30 minutes for menu           Cooking schedule: see below for instructions

       We'll finish up the mushrooms with this dinner, most for the beef patties but a few in the quinoa. Sauté the onions and mushrooms, then divide and stir some into the quinoa before serving.

Beef Patties with Mushrooms

Total time: 30 minutes
    Use wild or exotic mushrooms if you can.  It's the season and we may as well take advantage.  But even the plain white button or brown cremini will make a delicious sauce.

Quinoa with Mushrooms

Total time: 20 minutes
    This near-perfect food of the Incas has slowly been gaining recognition in the culinary world. It cooks quickly and has a nutty flavor that goes with everything.  Here it's paired with the earthy taste of mushrooms and shallots.

Quinoa with Mushrooms Ingredients:


Cauliflower with Horseradish

Total time: 20 minutes
    Horseradish and sharp mustard add a nice zing to cauliflower.

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
large skillet with lid, small saucepan, lid, saucepan
with steamer basket and lid
Trim mushrooms, divide
Finely chop mushrooms for burgers, quinoa
Slice mushrooms for sauce
Chop onion
Mince garlic
Sauté chopped mushrooms, onion, garlic
Start to cook quinoa
Cut cauliflower
Remove onion, mushroom, garlic, divide
Set half aside for quinoa, half for beef

Mix ingredients for patties, add beef/veg, mix well
Make patties
Sauté patties
Steam cauliflower
Turn patties
Remove patties to plate, cover with lid
Add onion, mushrooms to skillet for sauce
Remove cauliflower
Heat stock, mustard, horseradish, tarragon
Add cauliflower, stir to coat
Finish mushroom sauce
Return burgers to heat through
Add onions, mushrooms to quinoa, stir
Put burgers back on plate, top with mushrooms
Remove cauliflower, quinoa, Serve
