Glazed Turkey Cutlets
Brown Rice and Beans, Oriental Style

          Red beans and rice doesn't have to be Cuban or Southern.  They're a nutritious pairing regardless of the flavoring and for this dinner I gave them more of an Asian influence to match the turkey.  With quick cooking brown rice this dinner should be on the table in under 30 minutes. 

Lemon and Soy Glazed Turkey Cutlets

Total time: 20 minutes
    Turkey cutlets, are thin slices of turkey breast meat.  They cook quickly and are particularly well suited to savory marinades and sauces.  If you can't find them, substitute thinly sliced turkey tenderloin or chicken breasts. This is an intensely flavored, savory dish.

Brown Rice and Beans, Oriental Style

Total time: 25 minutes
    Sauté onions and celery, add red kidney beans (or any color/type of bean) and cooked, brown rice for a nutritious side dish, full of vitamins and fiber.  Use  quick-cooking brown rice to save time.  Flavored with soy sauce, sherry and Balsamic vinegar, this gives 'Beans and Rice' a whole new meaning!

 Instructions:

Cooking schedule: 25 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small bowl, dish for marinating, large skillet with lid,
saucepan with lid, medium skillet with lid

Mix marinade, pour over turkey
Cook rice
Slice onion, celery
Mince garlic, ginger
Sauté onion, garlic, ginger for turkey
Sauté paprika, onion, celery for beans
Open, drain, rinse beans

Move onion, garlic aside, sauté turkey
Add garlic to skillet for beans
Turn turkey
Add beans, vinegar, soy, sherry to onions/celery
Cover, reduce heat to low
Add reserved marinade to turkey, cover, simmer
Dissolve cornstarch in water
Check rice, when done, stir into beans
Remove turkey
Increase heat under skillet, thicken sauce for turkey
Pour glaze over turkey
Put beans and rice in a bowl, serve
