Stir-Fried Beef and Broccoli
Basmati Rice

         This is one of the first dishes I made when I started stir-frying and it's always been a favorite. Winter-hard tomatoes are perfect for it!  I served it on fluffy, white Basmati for a change from my usual Brown Rice.  The pepper is left from last week.

Stir-Fried Beef and Broccoli

Total time: 25 minutes
    Flank steak lends itself very well to stir-frying, but a lot of markets are selling packages of pre-cut meat just for this purpose - take advantage of someone else's work if you can! You can arrange the rice on a platter, spoon the beef and broccoli on top and serve, or use separate bowls.

Stir-Fried Beef and Broccoli Ingredients:

 Instructions:

Cooking schedule: 25 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan with lid, large skillet, plate

Cut beef
Mix sesame oil, soy sauce, add beef, toss to coat
Slice onion, pepper, celery
Mince garlic, ginger
Open, drain, slice water chestnuts
Melt butter for rice
Sauté rice
Add stock to rice, cover, cook
Cut broccoli
Slice tomato

Heat oil in skillet
Add onion, celery, pepper, stir-fry
Add water chestnuts, garlic, ginger, stir-fry
Remove vegetables to plate
Add beef to skillet, stir-fry
Put beef with vegetables
Add broccoli to skillet, stir-fry
Add tomato to broccoli, stir-fry
Add stock, sherry to skillet
Return everything to skillet, cover, simmer
Dissolve cornstarch in soy sauce
Uncover, add cornstarch, stir until thickened
Fluff rice
Serve
